At Fieldstone restaurant, Chef Chanthy Yen and Owner/Operator Emiliano Rivera believe that working with Quebec’s local farmers, young entrepreneurs, and up and coming chefs will produce a legacy of creativity that will remain a bedrock in Montreal’s culinary scene for years to come.
Fieldstone is a showcase of their shared stories, a blend of flavours and techniques drawn from Mexico, Cambodia, Spain and Canada. Chef Yen brings years of experience and innovation to the table after spending time at some of the world’s most influential restaurants and culinary institutions, including Mugaritz and the El Bulli Foundation in Spain. More recently Chef Yen worked as Sous Chef at the Mackenzie Room in Vancouver and oversees pastries at Bar George in Montreal.
